Salted Caramel Brigadeiro Walnut Chocolate Chip Cookie recipe (Mary's Brigadeiro recipe)

Sometimes the only thing we need is making desserts for comfort and to create fun moments with our family, especially these times that many people are doing their parts in social isolation or self-quarantine to prevent the spread of COVID-19.

At Mary's Brigadeiro Chocolate store in Toronto, we create unforgetable memories with our chocolate creations. We share moments of happiness with a chocolate box, we spread love through a sweet fragrance of our freshly baked Brigadeiro Chocolate Chip Cookies and even more. We have the opportunity to watch smiles when we welcome the people of our community to our place!

We welcome you to replicate these sweet memories in your home with our

CHOCOLATE CHIP COOKIE WITH WALNUT AND SALTED CARAMEL BRIGADEIRO RECIPE!

Ingredients:
1 cup unsalted butter (room temperature)
1 cup Brown Sugar
1/2 cup granulated Sugar
2 Large Eggs
1 1/2 cups Cake Flour
1 1/2 cups All Purpose Flour
1 teaspoon Cornstarch
3/4 teaspoon Baking Soda
3/4 teaspoon Salt
2 cup Dark Chocolate Chips (up to 54% cacao preferable)
1 cup Walnuts roughly chopped
Fleur de Sel (decoration)
Salted Caramel Brigadeiro from Mary's Brigadeiro
Instructions:
1 - Preheat oven to 350 degrees.
2 - In a large mixing bowl, cream together soft cubed butter, brown sugar, and sugar for 4 minutes or until creamy.

3 - Add the eggs in a separate bowl, one at time, mixing well after each one and add them in your cookie recipe.

4 - Stir flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing.

5 - Add your favourite Chocolate Chips. We use Belgium Callets from Callebaut, it's a mix of their 54% and 70% cacao. They are bigger than chocolate chips and it will give you an extra dose of Happiness! ...But you can add your favourite chocolate bar in little pieces.

6 - Add Walnuts (roughly chopped). You can also double this portion if you want or change the walnut for your favourite nuts. We tried this recipe with Pecan and it turned out great!

Tip: If you don't have a mixer, you can easily play with the ingredients by hand. Make sure to properly clean the surface and welcome the kids! This also works if your dough becomes too soft, so you just need to sprinkle flour and mix it again.
7 - Separate dough into medium balls, opening the dough and add a small portion of our Salted Caramel Mary's Brigadeiro inside... And yes! You can place your order online and receive them at home, butttt if you don't have them available right now, you can add a teaspoon of your favourite chocolate spread, or peanut butter spread as well.
8 - Place the cookies on a cookie sheet. Don't forget to give them an extra space, they are bigger than you think!
9 - Bake for 15 minutes or until golden brown on the top. If you are a 'Soft' kind of cookie person, bake them for 12 minutes or if you are a 'Soft Crunch' cookie fan, bake them for 15 minutes.
Tips:
*You can substitute Cake Flour for All Purpose Flour, you may add more butter for a softer dough.
*We don't use Vanilla Extract, but if you enjoy it, feel free to use 1 teaspoon when adding the Large Eggs to the batter.
You can THANK ME later! :)
